Cherry Almond Fudge
Valentine's Day Chocolate Recipes
Soft and moist, this almond and cherry fudge
will make Valentine's Day even more sweeter!

Makes: about 36 pieces
Ingredients:
Sugar - 2 cups/500 ml
Evaporated milk - 1 can/5 oz/150 g
Butter - 1/2 cup/125 ml
Semisweet chocolate chips - 1 package/12 oz/360 gms
Marshmallow crème - 1 jar/7 oz/210 g
Vanilla - 1 tsp
Slivered almonds, toasted - 1 cup/250 ml
Dried Bing cherries, chopped - 3/4 cup/175 ml
Directions:
1. Stir sugar, milk and butter in a 3-quart saucepan
over medium-high heat until butter melts and the mixture comes to a
full boil. Continue to cook for 5 more minutes, stirring constantly.
2. Remove the saucepan from heat. Gradually mix in chocolate chips
until melted, then mix in marshmallow crème until melted and
thoroughly blended.
3. Mix in vanilla, slivered almonds and
cherries.
4. Transfer the batter to a buttered 9 inch square dish and
smooth the top. Allow to set in cool place for 2 to 3 hours.
• Cut fudge into squares; arrange and cover with plastic wrap in
gift packages, or place on serving dish. To store, wrap and
refrigerate up to 1 week. Bring to room temperature before
serving.
