Pecan Shortbread Bars
Valentine's Day Cookies & Bars
Pecan
topped, chocolate layered shortbread with a hint of citrus to add
more sweetness to your Valentine's Day celebration.
Ingredients:
Butter - 1 cup /250 ml
Light brown sugar - 1 cup /250 ml
Egg yolk - 1
Vanilla extract - 1 tsp/5 ml
Grated orange peel - 1/2 tsp/2 ml
Almond extract - 1/4 tsp/1 ml
Flour - 2 cups /500 ml
Toasted Pecans - 1 cup/250 ml, divided
Semi-sweet chocolate chips - 1 package /12 oz, 360 gms
Directions:
1. Cream butter with brown sugar until light and
fluffy.
2. Beat in egg yolk. Beat in vanilla extract, orange peel and almond
extract.
3. Stir in flour and ½ cup (125 ml) pecans, toasted and chopped.
Spread dough into well greased 9 x 13-inch baking pan.
4. Bake at 350°F (180°C) degrees for 25 minutes, or until golden
brown.
5. Remove from oven; sprinkle top evenly with chocolate chips.
6. Return pan to oven for 30 seconds. Remove from oven and spread
melted chocolate evenly over surface. Sprinkle with remaining ½ (125
ml) cup pecan halves.
7. Cool. Cut into bars to serve.
