Black Forest Cupcakes
Valentine's Day Cupcake Recipes
Stuff all the goodness of a Black Forest cake into a
cupcake and dazzle kids and grown ups alike this Valentine's Day.
Makes:
12-14 cupcakes
Ingredients:
Cherry pie filling - 1 cup
Almond extract - 1/4 tsp
Castor Sugar - 1 1/3 cup
Butter - 165 grams
Bittersweet baking chocolate, melted - 1 (4-ounce) bar
Egg whites - 4
All-purpose flour - 3 1/4 cup
Baking soda - 1 1/4 tsp
Salt - 1/4 tsp
Unsweetened cocoa - 1/3 c
Nonfat buttermilk - 1 2/3 cup
Vanilla extract - 2 tsp
Vegetable cooking spray
Powdered sugar - 1 1/2 tsp
Decoration:
Whipped cream - 6 fl oz (2/3 cup, 160ml)
Cherry brandy - 2 tsp
Bittersweet (dark) chocolate - 4 oz (100g)
Maraschino cherries - 1 can
Directions:
1. Combine pie filling and almond extract; stir
well, and set aside.
2. Combine 1-1/3 cups sugar and butter in a
large bowl, beating well at medium speed of an electric mixer.
Add melted chocolate; beat well. Add egg whites; beat well.
3. Fold in the cherry pie filling.
4. Combine flour, soda, salt and cocoa and add
to sugar mixture alternating with buttermilk, beginning and
ending with flour mixture. Mix well after each addition.
5. Stir in vanilla. Pour into a cupcake tin
lined with paper cases.
6. Bake at 350 degrees for 40 minutes or until a
wooden pick inserted in center comes out clean.
Decorating the Black Forest Cupcakes
1. Fold cherry brandy into the whipped cream and
grate the dark chocolate.
2. Pipe cream on to the cooled cupcakes and roll
edges in grated chocolate.
3. Top each cupcake with a maraschino cherry to
finish.
