Chocolate Cupcake Cake Pops
Valentine's Day Recipes for Kids

Try making these creative cake balls on a stick instead of plain old cake this valentine's day. Inspired from the "cake pop artist" Bakerella, these miniature cupcakes on a stick are sure to be a hit!

Makes: 50

Ingredients:

  1. 1 Chocolate Cake (similar to 13x9 inch cake)

  2. 1 can (16 oz) Cream cheese frosting

  3. 1 package chocolate bark or candy coating

  4. Wax paper

  5. Lollipop Sticks

  6. Styrofoam Sheet

  7. Pink Candy Melts

  8. Sprinkles and M&Ms to decorate

Directions:

Cake pops are basically cake balls on a stick. While regular cake pops only require you to make balls out of the crumbled cake and cream cheese mixture, these need to be molded into cupcake shapes before dipping into chocolate candy coating.

1. Bake and cool chocolate cake from a mix or from scratch.

2. Crumble the cake and add cream cheese to it. You will get a pliable mixture.

3. Form balls out of the cake and cream cheese mixture and shape them into slightly oblong balls to make the tiny cupcakes. Insert lollipop sticks at the flat molded end, place on a cookie sheet and chill or freeze for several hours.

4. Melt chocolate bark in microwave as per the directions using a deep dish to make dipping easier. Remove the firm balls from the refrigerator and dip them in the melted chocolate. Work with a few pops at a time so that the others stay firm inside the refrigerator.

5. When dipping, swirl the pops in the coating airing it for a few seconds so that the chocolate starts setting and doesn't drip when you hold them right side up. Affix each coated pop in a thick styrofoam sheet.

6. When chocolate coating is set, microwave pink candy melts and dip the tops of the pops in them to create the look of a frosted cupcake.

7. Sprinkle decorations before the candy melts set.
