Pears Poached in Barolo Wine
Serves 6
Ingredients:
450ml Barolo Wine (can be substituted with any other full
bodied wine)
1/2 cinnamon stick
2 star anise
150g golden caster sugar
8 large pears
1 Orange - sliced to serve
Directions:
1. Place wine, cinnamon, star anise and sugar in a saucepan and slowly
heat until the sugar dissolves.
Increase the beat and bubble away for about 5 minutes.

Meanwhile peel the pears leaving on the stalks.

Place them in the wine mixture and cover with a lid.
Cook for 10 minutes then turn them gently so the pears are wine stained
all over.
4.
Continue cooking for 10 to 15 minutes until tender to the point of a
knife.
5. Serve atop an orange slice and pour over some of the
liquid on each serving.
